I have people tell me all the time that they don’t like tomatos. I was the same way, which you may not believe if you look on my kitchen counter or in my garden. There are fresh tomatoes everywhere. That of course brings up the question – What can I make with fresh tomatoes?

Of course they are great just fresh of the vine, or even cut and topped with a little salt, pepper and fresh parsley. Take it a step further by adding a little extra virgin olive oil (EVOO) and vinegar and you have a refreshing tomato salad. Chopped onion and garlic are also good in there. 

If you chop the tomatos finely before you turn them into tomato salad, you can then use the marinated mixture as a bruscetta topping. Of course you can also turn your fresh tomatoes into salsa, sauce or soup.
