Most people don’t even stop to think about how much trust they place in the hands of a restaurant manager. When they sit and order a meal they just take food safety for granted. They worry more about how good the service is.

The industry has spent a lot of energy and money to keep this very implicit trust in place. In face the entire food service industry, whether fast food or the gourmet restaurant, simply could not exist without it. If you had to worry about if the food you order was safe or not you would never step foot in a restaurant.
